How to cook our veal osso buco

Veal osso buco, a traditional Italian dish, is a meat preparation that evokes rich, comforting flavors. The mixture of simple ingredients such as veal shanks, vegetables, herbs and white wine transforms into a succulent and hearty dish. Here is our veal osso buco recipe:


  • 2 pieces of osso buco
  • ¼ teaspoon of salt
  • 2 tablespoons of olive oil
  • 1 small onion, diced
  • 1 carrot, peeled, diced
  • 4 cloves of garlic, minced
  • 375 ml dry white wine
  • 240 ml of water
  • 2 chicken stock cubes
  • 2 tablespoons of fresh thyme
  • 411 g diced tomatoes, canned
  • 3 tablespoons of tomato paste
  • 80 ml fresh parsley, chopped


        1. Season the veal shanks with salt. Prepare the vegetables by dicing the onion and carrot, and mincing the garlic.
        2. In a large skillet, heat the olive oil over high heat. Add the veal shanks and brown for about 2 minutes on each side. Remove the veal and set aside.
        3. In the same pan, add the diced onion, carrot and minced garlic to the pan. Sauté the vegetables over medium heat until they become slightly tender.
        4. Pour the dry white wine into the pan to deglaze, scraping the bottom of the pan to release the cooking juices. Let simmer for a few minutes.
        5. Add the water, chicken stock cubes, canned diced tomatoes and tomato paste. Mix well. Also add the fresh thyme.
        6. Return the pieces of veal osso buco to the pan. Make sure they are well immersed in the sauce and that the sauce reaches the sides of the pieces.
        7. Preheat the oven to a low, constant temperature, generally around 150°C (300 °F). Cover the pan with an ovenproof lid or use a sheet of aluminum foil. Place the pan in the oven and simmer gently for about 2 hours.
        8. After 2 hours of cooking, check the tenderness of the meat. If necessary, extend cooking for a few minutes. Once cooking is complete, remove the pan from the oven. Carefully remove the pieces of veal osso buco and place them on a serving dish.
        9. Sprinkle the osso buco pieces with chopped fresh parsley and minced garlic for a touch of freshness and added aroma. Serve the dish hot and enjoy!
