Veal osso buco, a traditional Italian dish, is a meat preparation that evokes rich, comforting flavors. The mixture of simple ingredients such as veal shanks, vegetables, herbs and white wine transforms into a succulent and hearty dish. Here is our veal osso buco recipe:
Ingredients
- 2 pieces of osso buco
- ¼ teaspoon of salt
- 2 tablespoons of olive oil
- 1 small onion, diced
- 1 carrot, peeled, diced
- 4 cloves of garlic, minced
- 375 ml dry white wine
- 240 ml of water
- 2 chicken stock cubes
- 2 tablespoons of fresh thyme
- 411 g diced tomatoes, canned
- 3 tablespoons of tomato paste
- 80 ml fresh parsley, chopped
Instructions
- Season the veal shanks with salt. Prepare the vegetables by dicing the onion and carrot, and mincing the garlic.
- In a large skillet, heat the olive oil over high heat. Add the veal shanks and brown for about 2 minutes on each side. Remove the veal and set aside.
- In the same pan, add the diced onion, carrot and minced garlic to the pan. Sauté the vegetables over medium heat until they become slightly tender.
- Pour the dry white wine into the pan to deglaze, scraping the bottom of the pan to release the cooking juices. Let simmer for a few minutes.
- Add the water, chicken stock cubes, canned diced tomatoes and tomato paste. Mix well. Also add the fresh thyme.
- Return the pieces of veal osso buco to the pan. Make sure they are well immersed in the sauce and that the sauce reaches the sides of the pieces.
- Preheat the oven to a low, constant temperature, generally around 150°C (300 °F). Cover the pan with an ovenproof lid or use a sheet of aluminum foil. Place the pan in the oven and simmer gently for about 2 hours.
- After 2 hours of cooking, check the tenderness of the meat. If necessary, extend cooking for a few minutes. Once cooking is complete, remove the pan from the oven. Carefully remove the pieces of veal osso buco and place them on a serving dish.
- Sprinkle the osso buco pieces with chopped fresh parsley and minced garlic for a touch of freshness and added aroma. Serve the dish hot and enjoy!
