Ingredients
- 450g of organic ground chicken from Viandes Bio de Charlevoix
- ½ cup breadcrumbs
- ½ cup of milk
- 1 small shallot, minced
- 4 cloves of garlic, minced
- ¼ cup grated parmesan
- 1 tablespoon of lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons chopped fresh parsley
- 2 teaspoons dried oregano
- 2 tablespoons of olive oil
- Salt and pepper
Instructions
- Preheat the oven to 450°F. Cover a large baking sheet with parchment paper and lightly oil it.
- Place the breadcrumbs in a large bowl and pour in the milk. Stir and let sit for 5 minutes.
- Add remaining ingredients including shallot, garlic, ground chicken, cheese and herbs. Mix well with your hands until all ingredients are evenly distributed.
- Form about 15 balls with the meatball mixture.
- Place the meatballs on the prepared baking sheet and drizzle lightly with olive oil.
- Bake for 25 to 30 minutes, until the meatballs are golden brown and the internal temperature reaches 165°F.
