In the spring, we sometimes want to pair our meats with Quebec maple products. But, have you ever tried maple fish? Salmon and many white fish are delicious when combined with maple! Ingredients
2 loins of Icelandic (or Pacific ) cod
⅓ cup of Boreal maple syrup with dune pepper (or Labrador Tea)
½ lime
1 pinch of lime zest
Salt and pepper, to taste
Ground dune pepper (optional)
Preparation
In an airtight bag, mix the boreal maple syrup, lime juice and zest.
Add the cod to the bag and leave to marinate in the refrigerator for 1 hour or more
Preheat oven to 350°F.
On a baking sheet covered with parchment paper, cook the cod for 10 to 12 minutes. Add salt and pepper to taste.
For added flavor, add a pinch of ground dune pepper (optional).
Serve with Basmati rice and green beans, if desired.
