Roasted wild walleye with capers, olives and tomatoes

These roasted wild walleye fillets with capers, olives and tomatoes are simple to prepare and completely delicious. And you can adapt the recipe according to your preferences of fish, olives and herbs! Here's how to prepare it:

Ingredients :

  • 4 fillets of wild walleye
  • 1 cup cherry tomatoes, cut in half
  • 1/4 cup green olives, sliced
  • 1/3 onion, thinly sliced
  • 3 cloves of garlic, minced
  • 2 large spoonfuls of capers, drained
  • 2 large pinches of parsley, chopped
  • Olive oil
  • Salt and pepper
  • Oregano
  • Lemon

Instructions :

1. Preheat oven to 425 °F
2. Add the tomatoes, olives, onion, garlic, capers and parsley to the baking dish. Add 1.5 tablespoons of olive oil, salt and pepper. Mix to combine the ingredients. Spread the mixture evenly in the baking dish.
3. Place the wild walleye fillets on the tomato mixture, drizzle the fish with olive oil, salt, pepper and add oregano. Sprinkle the fish with lemon juice and put it in the oven.
4. Roast for 20 to 25 minutes, watching for golden fillets. Serve in the baking dish or on a serving platter, topping the fish with the tomato mixture and any juices. Garnish with parsley and another large juicy lemon.
