Enjoy with a simple salad and crusty bread, simply cooked potatoes or rice.
For 4 people
Ingredients :
- 4 haddock loins
- Salt
- Pepper
- 3 tablespoons of olive oil
- 1 brown onion, finely diced
- 2 cloves of garlic, roughly chopped
- 4 tablespoons of capers
- 2 cups of cherry tomatoes
- 2 teaspoons dried oregano
- 1/2 cup pitted kalamata olives
- 1/2 cup sliced roasted peppers
- A handful of parsley leaves
- Lemon wedges to serve.
Instructions :
1. Salt and pepper the fish and drizzle with olive oil. To book.
2. Melt the onions and garlic in the olive oil over medium heat. Salt and pepper.
3. Add the capers, tomatoes and dried oregano.
4. Reduce the heat and cook the tomatoes until they burst, crushing them gently with a fork.
5. Place the pieces of haddock and distribute the grilled peppers.
6. Cover and simmer over low heat for 10 minutes.
7. Add fresh & chopped parsley and lemon.
