Fishing method: The tuna fishery uses longlines (MSC certified). Longlining is longline fishing with baited hooks attached at intervals by means of a large number of secondary lines called branchlines. Circle hooks are used to reduce the amount of bycatch and to ensure that the hook does not end up in the fish's stomach. The lines are set at specific depths to prevent bycatch of juvenile sharks and shark species. Fishermen and other boat crew members are specially trained and equipped to rescue turtles and marine mammals caught inadvertently.
How to prepare it?
Yellowfin tuna steaks are most often grilled or seared to bring out their flavor, but you can also bake it for a different texture. Perfect for a Niçoise salad , tatakis, ceviches or sashimi.
