Ingredients

  • 2 ½ lbs medium turnips
  • 1 C. tablespoon of salt
  • 6 tbsp. tablespoon of butter
  • 4 onions, quartered
  • 1 ½ lb of meat cubes
  • 1 C. tablespoon of pepper
  • 1 C. teaspoon ground turmeric
  • 2 tbsp. tablespoon of coriander
  • 6 cloves of garlic, chopped
  • 1 C. Garam Masala, ground

Instructions

1. Cut the turnips into quarters and prick them all over using a fork. Place in a bowl with salt. Mix. Let stand at least 1 hour for bitter juices to drain. Preheat oven to 350°F.

2. Heat an ovenproof saucepan over medium heat. Add the butter, onions and meat cubes. Cook until the color begins to change. Add the pepper, turmeric, coriander and garlic. Sauté for 2 minutes.

3. Rinse the turnips and add them to the pot with 1 cup of water. Sprinkle with Garam Masala. Cover and cook until steam escapes under the lid. Place on the center rack of the oven and bake for 1½ hours. Leave to rest for 30 minutes.

Ingredients

  • 1 clove of garlic
  • 10 g of fresh ginger
  • ½ sweet pepper
  • 150 g leek, cut into slices
  • 15 ml of olive oil
  • 1 beef stock cube
  • 1 L of water
  • 100 g Chinese cabbage, chopped
  • 20 ml of fish sauce (nuoc-mâm)
  • 30 ml soy sauce
  • 150 g of meat cubes
  • 100 g dry egg noodles
  • 1 onion, chopped
  • 6 sprigs of fresh coriander, hulled

Instructions

1. In a large saucepan, heat the olive oil over medium heat. Add the chopped garlic, ginger and sweet pepper. Sauté for about 1 to 2 minutes.

2. Add the leek slices to the pan and sauté for 2 to 3 minutes.

3. In the same saucepan, add the beef stock cube and water. Bring to a boil, then reduce heat to medium-low. Let simmer for about 10 minutes for the flavors to blend.

4. Add Chinese cabbage, fish sauce and soy sauce to the pot. Cook for about 5 more minutes.

5. While soup simmers, cook egg noodles according to package directions. Once cooked, drain and set aside.

6. In a separate pan, sauté the meat cubes until cooked through and lightly browned.

7. To serve, divide the cooked noodles into individual bowls. Pour the hot soup over the noodles.

8. Garnish each bowl with the sautéed meat cubes, chopped onion and fresh coriander leaves.

Ingredients

  • 2 lbs of meat cubes
  • 1/2 lb chopped carrots
  • 4 stalks of celery, chopped
  • 1 chopped red onion
  • 2 medium potatoes cut into 1-inch cubes
  • 1 bunch organic kale, torn into small pieces
  • 2 cloves of garlic, minced
  • 1 C. tablespoon of fresh rosemary

Instructions

1. Add all ingredients except kale to a slow cooker. Cover and place over medium heat. Leave to cook for at least 8 hours.

2. Before serving, add the kale to the slow cooker and mix. Cover and let wilt for about 10 minutes or until tender.

3. Serve in individual bowls. Garnish with parsley if desired.
