Fishing method: The tuna fishery uses longlines (MSC certified). Longlining is longline fishing with baited hooks attached at intervals by means of a large number of secondary lines called snoods. Circle hooks are used to reduce the amount of bycatch and to ensure that the hook does not end up in the stomach of the fish. The lines are set at specific depths to prevent bycatch of juveniles and shark species. Fishermen and other boat crew are specially trained and equipped to rescue inadvertently caught turtles and marine mammals.
How to prepare it?
Albacore tuna steaks are most often grilled or seared to bring out their flavor, but you can also bake it in the oven for a different texture. Perfect for a niçoise salad, tatakis, ceviches or sashimi.
