Black pudding is made exclusively from pig's blood. Pork fat is roughly chopped, then cooked and filtered to extract some of its lipids and make it more digestible. It is then added to pork blood and onion which has been previously cooked in equal proportion. In order to gain smoothness, country cream is added when seasoning. This preparation is embossed (put in natural casings) then delicately poached. 2 per package.

How to prepare it?
Sautéed apples are a classic accompaniment. If you want to vary, accompany it with pears or pineapple, or mashed sweet potatoes. Coat the pudding with puff pastry and bake it in the oven to obtain a delicious sausage in a crust.
