In conventional farming, chickens are fed grain, but also meal made from animal by-products. With very little space to move about, chickens are fatter. To cool the chicken, its flesh is immersed in water, so that it loses volume during cooking. At La Ferme des Voltigeurs and Les Viandes Bio de Charlevoix, chickens are fed 100% vegetable grains, have more room to move, receive no preventive antibiotics and are air-cooled rather than water-cooled. Their meat is tastier, less fatty and loses almost no volume during cooking. Organically raised chickens benefit from grains grown without the use of pesticides, insecticides, chemical fertilizers or GMOs. Chickens also have access to the outdoors, so they can eat all-natural ingredients in natural daylight.
