When the leaves start to fall and the air gets cooler, it's time to turn to comforting dishes to warm our hearts and stomachs. One of the joys of the autumn season lies in the variety of fall vegetables available, and what better way to incorporate them than in a stew? Here's a recipe for pork and pumpkin stew that perfectly embodies the flavors and aromas of autumn.
Ingredients
- 1 tablespoon olive oil
- 1 1/2 cups chopped onions (about 1 large onion)
- 2 cloves garlic, minced
- 2 pounds of pork cubes
- Salt and black pepper, to taste
- 1 tablespoon tomato paste
- 2 1/2 cups beef broth
- 1/4 cup red wine
- 1 teaspoon dried oregano
- 1 sprig of fresh thyme
- 1 bay leaf
- 4 cups peeled and cubed 1-inch pieces of pumpkin
- 1/2 cup roasted pumpkin seeds (for garnish)
Instructions
Step 1: In a large pot, sauté the onion in olive oil over medium heat until tender, about 5 minutes. Add the garlic and cook for 1 minute until fragrant.
Step 2: Add the pork cubes and 1 teaspoon of salt, and sauté for 5 to 7 minutes. Add the tomato paste and cook for 1 minute.
Step 3: Add the remaining ingredients except for the pumpkin cubes, cover, and simmer until the meat is tender, about 1 and a half hours.
Step 4: Add the pumpkin and cook for an additional 30 to 35 minutes, or until the pumpkin cubes are tender.
Step 5: Taste and adjust seasonings if necessary, discard the bay leaves, and serve. For a crunchy touch, sprinkle each serving with roasted pumpkin seeds.
