Ingredients::
2 Iceland cod fillets (or Pacific cod fillets)
⅓ cup of Boreal maple syrup with dune pepper(or Labrador Tea)
½ lime
1 pinch of lime zest
Salt and pepper, to taste
Ground dune pepper (optional)
Preparation:
In a sealed bag, mix the boreal maple syrup, lime juice, and zest.
Add the cod to the bag and let it marinate in the refrigerator for 1 hour or more.
Preheat the oven to 350 °F.
On a baking sheet lined with parchment paper, cook the cod for 10 to 12 minutes. Salt and pepper to taste.
For added flavor, sprinkle with a pinch of ground dune pepper (optional).
Serve with Basmati rice and green beans, if desired.
