Lamb Meatball with Coriander, Parsley, Cumin, Oregano, and Sour Cream

 

Ingredients:

For the lamb meatballs:

  • 500g of lean ground lamb (for a more economical version of the recipe, use grass-fed lean beef)
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of fresh coriander, chopped
  • 1 teaspoon of ground cumin
  • 1 teaspoon of dried oregano
  • Salt and freshly ground black pepper, to taste

 

For cooking:

  • 2 tablespoons of olive oil
  • 5-7 small shallots, peeled
  • 1 cup of beef or lamb broth
  • Juice of 1 lemon
  • 1 tablespoon of butter
  • Salt and freshly ground black pepper, to taste

 

Instructions:

  1. In a large bowl, combine the ground lamb, onion, garlic, parsley, coriander, ground cumin, dried oregano, salt, and pepper. Mix well so that all the ingredients are thoroughly incorporated.

  2. Shape the mixture into small walnut-sized meatballs.

  3. In a large skillet, heat the olive oil over medium heat. Add the peeled shallots and lightly brown them on all sides.

  4. Remove the shallots from the skillet and set them aside.

  5. In the same skillet, add the lamb meatballs and brown them on all sides until they are well-cooked and slightly crispy.

  6. Return the shallots to the skillet with the lamb meatballs.

  7. Pour the beef or lamb broth into the skillet. Add the lemon juice, butter, salt, and pepper. Reduce the heat to medium-low.
