This delicious stuffed squash recipe is an original way to prepare a squash. It's made with a filling of beef, rice, and parmesan cheese!

How to tell if a squash is ripe?
When the stem is dry, and the color of the squash is dark green. It will also have orange spots.
Ingredients:
- 1 small acorn squash
- 1/2 pound of 100% Charlevoix Natural Ground Beef*
- 1/2 onion, chopped
- 1 clove of garlic, minced
- 1/2 cup cooked rice
- 1/4 cup breadcrumbs
- 1/4 cup grated parmesan cheese
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/4 cup beef or vegetable broth
- 2 tablespoons olive oil
- Grated cheese (optional, for garnish)

Instructions:

Preheat your oven to 375°F (190°C).

Cut the acorn squash in half lengthwise. Scoop out the seeds with a spoon. Place the squash halves on a baking sheet, cut side up.

In a bowl, mix the ground beef, onion, garlic, cooked rice, breadcrumbs, parmesan, thyme, salt, and pepper. Mix well until all ingredients are combined.

Fill the squash halves with the ground beef mixture. Press gently to pack it into the squash.

Pour beef or vegetable broth into the bottom of the baking sheet around the squash halves.

Drizzle the squash halves with olive oil, then sprinkle with additional salt and pepper.

Cover the baking sheet with aluminum foil and bake in the preheated oven for about 45 minutes, or until the squash is tender and the beef balls are cooked through.

If desired, sprinkle grated cheese on the stuffed squash during the last few minutes of cooking, then return to the oven until the cheese is melted and golden.
